
Here is one of my favorite cookbooks. It is called Wholesome Sugarfree Cooking. It is an Amish Cook book. You can purchase a copy here. Some of the recipes call for alot of honey. Too much honey is not good either. I substitute apple sauce for up to half of the honey. I was having a problem with some of the dessert recipes being dry.
TIP: My friend Kara told me to undercook the recipie...over cooking it dried it out. Also, she said to refrigerate the batter before adding the baking powder/soda, for an hour to hydrate the wheat. Then you can add more liguids if it still looks too thick. Works great!
